Taco Taco Taco...Burrito!!
One of my favorite meals is Gluten Free Vegan tacos a la cart!
Ingredients:
Cooked Lentils (This is made easier when you have rice cooker)
Corn Tortillas (I like soft)
1 Tbs Chili Powder
1/4 tsp Garilic Powder
1/4 tsp Onion Powder
1/4 tsp Crushed Red Pepper (optional)
1/4 tsp Oregano
1/2 tsp Paprika
1 1/2 tsp Cumin
1 tsp Salt
1 tsp Black Pepper
For the "Meat," I like to cook my lentils in my rice cooker. 1 Cup of dry lentils with 2 cups of water and set the cooker while you prepare/dice garnishes. Once Lentils are cooked, add seasoning and mix; mashing the lentils a little can help with a more refried beans texture. Put on a tortilla and add some toppings!!
Toppings:
Spinach
Diced Tomatoes
Avocados (chopped or guacamole)
Shredded Carrots
Diced Onion (I just started to like a little onion)
"Cheese" (I usually don't add this but I bet it'd be good)
Salsa
It really is super easy and you can create any combo with the toppings. It takes only about 15 mins to prepare (the waiting for the lentils to cook is the longest: 30 mins). As you can tell my favorite appliance is my rice cooker. You can cook any dry bean without soaking as long as you get the right amount of water. It's taken me a few try to find the best amounts for rice, lentils, black beans, etc.

Challenge Complete
My 2 week challenge to stop a bad habit is complete. I have lost 3 lbs by not binging to ease my uncomfortable/anxious/stressful moments. I didn't just do this by say, "Nope not going to binge." When I wanted to binge or felt the urge, I would take my dog, Phoenix for a walk or I would munch on some baby carrots (I have never binged on something healthy as raw food).
It was a very busy too weeks. Last week I was finishing up the rest of my packing. Then on the weekend, I moved into my new place (pictures will come later, I promise). I kept my first week extremely busy. I will admit I did have more alcohol than I should have this week but a little celebration for being on my own is alright for now.
I have been walking to and from work (2.94 miles one way). I also take Phoenix on a morning walk/jog and her evening walk (anywhere from 3-8 miles). I have not been doing my yoga regularly but I will be starting next week. I plan on joining that crossfit gym next weekend too! Life has turned around. This weekend is all about unpacking, cleaning my apartment, and relaxing. Sunday I will be doing a 5k charity walk for Girl's on the Run. I will be my own superhero, Robin from batman (and of course, I'll post pictures of this as well). Sand Volleyball has been a Sunday Funday thing. Hopefully the weather will continue to get warmer and stop all this rain.
I have been cooking more as well. Eating leftovers, which is a first. My home-made pizza recipe (below) is how I started my first week in my new place.
Spinach, Pineapple, Sun dried Tomato Pizza
1 Bag of Gluten Free Pizza Dough Mix (I can't think of the brand I use but it's amazing. It does have yeast in it...I'll get back to you)
1 can of Eden Organic Pizza Sauce (so good, it's more a salty sauce than sweet since we will be having pineapple on this pizza)
A handful of Daiya Mozarella Shreds (I don't like that much because it can get a little slimy)
1 can of Pineapple
2 handfuls of spinach (it shrinks so put a little extra for some green goodness)
A few Sun dried tomatoes (I usually get ones that have been saved in olive oil to add a little greasy-ness to my pizza...I think good fats help burn stored fat in the body plus it feels like 'cheating' without the guilt)
Prepare and cook pizza crust as package suggests. After I cook the crust a little, then I add all ingredients and cook it for about 10-15 more mins. I like a little crispy on the bottom and crust and dough in the middle!!
When I don't feel like cooking my own pizza, I have found a cute little pizza by slice place near me and I'll go there for their margherita gluten free vegan pizza!! Mmmm!! Have a great weekend!

Quick Update
Week 1 of getting rid of my Bad Habits, it's been good. I haven't had a binge. I've lost 1.5 lbs. I feel good. I haven't had any negative feelings about my food or eating habits. But the challenge isn't over yet! One more week. Also, I move into my new place in 2 days!!!! I got my new car! 2003 Grand Am GT 2 door; so much excitement I could burst! So much is falling into place. YAY!
